December Visit to NC

Good afternoon.  I am travelling back home to NC for the last couple of weeks in December.  My brother and I are considering a trip to the Boone area for a day of fly fishing (wading or floating).  Since he now lives in Florida and I live in Colorado we have lost touch with the best guide services in that area.  Any recommendations or leads as to whom to contact to catch some of the big browns and rainbows would be greatly appreciated.  Thank you.  I might live here, but heart and family still are in NC.
